Description

A cozy and nutritious autumn soup featuring butternut squash and apple, enhanced with maple syrup for a delightful flavor.


Ingredients

  • 1 medium butternut squash, peeled and diced
  • 2 apples, cored and chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1/4 cup maple syrup
  • Salt, to taste
  • Pepper, to taste


Instructions

  1. In a large pot, sauté onions and garlic until fragrant and translucent.
  2. Add diced butternut squash and chopped apples to the pot.
  3. Pour in the vegetable broth and maple syrup, and season with salt and pepper.
  4. Simmer until the vegetables are tender, about 20-25 minutes.
  5. Blend the mixture until smooth using an immersion blender or a regular blender.
  6. Adjust the consistency with additional broth if necessary, and serve warm.

Notes

Garnish with roasted pumpkin seeds or a swirl of cream. Serve with crusty bread or salad.
