Ingredients
- 1 medium butternut squash, peeled and diced
- 2 apples, cored and chopped
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1/4 cup maple syrup
- Salt, to taste
- Pepper, to taste
Instructions
- In a large pot, sauté onions and garlic until fragrant and translucent.
- Add diced butternut squash and chopped apples to the pot.
- Pour in the vegetable broth and maple syrup, and season with salt and pepper.
- Simmer until the vegetables are tender, about 20-25 minutes.
- Blend the mixture until smooth using an immersion blender or a regular blender.
- Adjust the consistency with additional broth if necessary, and serve warm.
