Description

A fresh and flavorful Marinated Cauliflower Salad that brings a twist to your typical salad, perfect for gatherings and picnics.


Ingredients

  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 tsp Dijon mustard
  • 1/4 tsp garlic powder
  • 1 Tbsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp freshly cracked black pepper
  • 2 Tbsp grated Parmesan
  • 1 head cauliflower
  • 1 (2.25 oz) can sliced black olives
  • 1/2 (12 oz) jar banana pepper rings
  • 1 red bell pepper
  • 1/3 cup diced red onion
  • 2 Tbsp chopped fresh parsley


Instructions

  1. In a jar or bowl, combine the olive oil, red wine vinegar, Dijon mustard, garlic powder, Italian seasoning, salt, pepper, and grated Parmesan. Whisk or shake until well mixed. Set it aside.
  2. Chop the cauliflower into small florets. In a large bowl, add the cauliflower along with the sliced black olives, banana pepper rings, chopped red bell pepper, diced red onion, and parsley.
  3. Pour the prepared dressing over the salad mixture and toss everything together until well coated.
  4. Let the salad chill in the refrigerator for at least 30 minutes to allow the flavors to marinate.
  5. Stir the salad again before serving to make sure the flavors are evenly distributed.

Notes

This salad is great as a side dish or as a light meal. Store leftovers in an airtight container in the refrigerator for up to 5 days.
