Description

Savory and sweet McGriddle Muffins combine all the flavors of a classic breakfast sandwich in a portable, muffin form.

Ingredients

  • 1 cup all-purpose flour
  • 1 tbsp sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 2 large eggs
  • 1/2 cup milk (or dairy-free alternative)
  • 1/4 cup real maple syrup (plus more for drizzling)
  • 1/4 cup melted butter or oil
  • 1 cup cooked breakfast sausage, crumbled
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat your oven to 375°F (190°C). Line or grease a 12-cup muffin tin.
  2. In a skillet, brown the sausage until it’s fully cooked. Make sure to drain any excess grease.
  3. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  4. In another bowl, whisk together the eggs, milk, maple syrup, and melted butter.
  5. Pour the wet ingredients into the dry ingredients and combine until just moistened.
  6. Gently fold in the cooked sausage and shredded cheddar cheese.
  7. Divide the batter evenly among the muffin cups.
  8. Bake for 15–18 minutes, or until the muffins are golden and a toothpick inserted comes out clean.
  9. Serve warm with extra syrup drizzled on top, or cool them for storage.

Notes

Best served warm with extra maple syrup. Can be stored in an airtight container for up to three days or frozen for up to three months.
