Ingredients

  • 1 lb chicken breast, diced
  • 1 cup orzo pasta
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach, chopped
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Fresh parsley for garnish


Instructions

  1. In a large skillet, heat olive oil over medium heat. Add chicken and season with salt and pepper. Sauté until golden brown, about 5-7 minutes.
  2. Add diced onion and minced garlic to the skillet, cooking until soft.
  3. Stir in orzo and chicken broth. Bring to a boil, then reduce heat to low and cover. Cook for 8-10 minutes, or until orzo is al dente.
  4. Stir in cherry tomatoes, spinach, and heavy cream. Cook for an additional 2-3 minutes until heated through.
  5. Garnish with fresh parsley and serve warm.
