Ingredients
- 1 lb chicken breast, diced
- 1 cup orzo pasta
- 3 cups chicken broth
- 1 cup heavy cream
- 1 cup cherry tomatoes, halved
- 1 cup spinach, chopped
- 1 onion, diced
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp salt
- 1/2 tsp black pepper
- Fresh parsley for garnish
Instructions
- In a large skillet, heat olive oil over medium heat. Add chicken and season with salt and pepper. Sauté until golden brown, about 5-7 minutes.
- Add diced onion and minced garlic to the skillet, cooking until soft.
- Stir in orzo and chicken broth. Bring to a boil, then reduce heat to low and cover. Cook for 8-10 minutes, or until orzo is al dente.
- Stir in cherry tomatoes, spinach, and heavy cream. Cook for an additional 2-3 minutes until heated through.
- Garnish with fresh parsley and serve warm.

For a gluten-free option, substitute orzo with gluten-free pasta or rice. For a dairy-free version, use coconut milk instead of cream.
