A bright and healthy Mediterranean Hummus Bowl with creamy hummus, roasted veggies, and fresh toppings, perfect for busy weeknights or gatherings.
Ingredients
- 3/4 cup thick hummus per bowl
- 1 tbsp olive oil for roasting
- Cherry tomatoes, halved
- Bell pepper, sliced
- Red onion, sliced
- Sea salt, to taste
- Pita or flatbread
- Cucumber, sliced
- Olives
- Chopped fresh herbs
- Feta cheese (optional)
Instructions
- Start with a thick hummus layer on the bottom of each bowl.
- Roast the vegetables: Toss cherry tomatoes, bell pepper, and red onion with olive oil and sea salt. Roast at 425°F for 18-22 minutes until caramelized.
- Warm pita or flatbread in a 400°F oven for 3-4 minutes or on a skillet.
- Slice cucumbers and halve tomatoes.
- Finish bowls with olives, chopped herbs, and a sprinkle of feta if desired.
Notes
Feel free to swap in different vegetables or proteins as desired. Use high-quality olive oil for best flavor.
