Description

A bright and healthy Mediterranean Hummus Bowl with creamy hummus, roasted veggies, and fresh toppings, perfect for busy weeknights or gatherings.


Ingredients

  • 3/4 cup thick hummus per bowl
  • 1 tbsp olive oil for roasting
  • Cherry tomatoes, halved
  • Bell pepper, sliced
  • Red onion, sliced
  • Sea salt, to taste
  • Pita or flatbread
  • Cucumber, sliced
  • Olives
  • Chopped fresh herbs
  • Feta cheese (optional)


Instructions

  1. Start with a thick hummus layer on the bottom of each bowl.
  2. Roast the vegetables: Toss cherry tomatoes, bell pepper, and red onion with olive oil and sea salt. Roast at 425°F for 18-22 minutes until caramelized.
  3. Warm pita or flatbread in a 400°F oven for 3-4 minutes or on a skillet.
  4. Slice cucumbers and halve tomatoes.
  5. Finish bowls with olives, chopped herbs, and a sprinkle of feta if desired.

Notes

Feel free to swap in different vegetables or proteins as desired. Use high-quality olive oil for best flavor.
