Ingredients
- 4 skinless, bone-in chicken thighs
- Salt and pepper to taste
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 shallot, diced
- 1 can (14 oz) artichoke hearts, drained
- 1 cup pitted green or Kalamata olives
- 1 cup chicken broth
- Juice and zest of 2 lemons
- Fresh parsley or cilantro for garnish
Instructions
- Season the chicken thighs with salt and pepper.
- Heat olive oil in a pan over medium heat and brown the chicken on both sides until crispy.
- Remove the chicken from the pan and sauté garlic and shallots until fragrant.
- Add artichokes, olives, and chicken broth to the pan.
- Return the chicken to the pan and simmer with lemon juice and zest until cooked through.
