Description

Ingredients

  • 4 skinless, bone-in chicken thighs
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 shallot, diced
  • 1 can (14 oz) artichoke hearts, drained
  • 1 cup pitted green or Kalamata olives
  • 1 cup chicken broth
  • Juice and zest of 2 lemons
  • Fresh parsley or cilantro for garnish


Instructions

  1. Season the chicken thighs with salt and pepper.
  2. Heat olive oil in a pan over medium heat and brown the chicken on both sides until crispy.
  3. Remove the chicken from the pan and sauté garlic and shallots until fragrant.
  4. Add artichokes, olives, and chicken broth to the pan.
  5. Return the chicken to the pan and simmer with lemon juice and zest until cooked through.
  6. Garnish with fresh parsley or cilantro before serving.
