Description

A nourishing and flavorful dish combining creamy white beans and vibrant greens, perfect for any meal.


Ingredients

  • 2 cans white beans, drained and rinsed
  • 2 cups fresh greens (kale or Swiss chard)
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 cup vegetable broth
  • Salt and pepper to taste
  • Red pepper flakes (optional)


Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add minced garlic and sauté until golden brown.
  3. Stir in the white beans and pour in the vegetable broth.
  4. Bring to a simmer and cook for about 5 minutes.
  5. Add the fresh greens and steam briefly until just tender.
  6. Season with salt, pepper, and red pepper flakes, then serve warm.

Notes

For added creaminess, stir in Greek yogurt or coconut cream before serving.
