Ingredients
- 2 cans white beans, drained and rinsed
- 2 cups fresh greens (kale or Swiss chard)
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 cup vegetable broth
- Salt and pepper to taste
- Red pepper flakes (optional)
Instructions
- Heat olive oil in a pan over medium heat.
- Add minced garlic and sauté until golden brown.
- Stir in the white beans and pour in the vegetable broth.
- Bring to a simmer and cook for about 5 minutes.
- Add the fresh greens and steam briefly until just tender.
- Season with salt, pepper, and red pepper flakes, then serve warm.
