Ingredients
- 1/2 cup brown butter
- 1 cup pumpkin puree
- 2 eggs
- 1 cup sugar
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 cup sugar (for streusel)
- 1/3 cup flour (for streusel)
- 2 tablespoons butter (for streusel)
- 1 teaspoon cinnamon (optional)
Instructions
- Brown the butter until it’s golden and smells nutty; let it cool.
- In a bowl, mix dry ingredients: flour, sugar, baking soda, and salt.
- In another bowl, combine pumpkin puree, eggs, sugar, and vanilla.
- Stir the wet ingredients into the dry ingredients until just combined.
- Prepare the streusel by mixing flour, sugar, and cold butter until pea-sized pieces form.
- Pour the batter into a loaf pan, sprinkle with streusel topping.
- Bake at 350°F (175°C) for 60 minutes or until a toothpick comes out clean.
