Description

Ingredients

  • 1/2 cup brown butter
  • 1 cup pumpkin puree
  • 2 eggs
  • 1 cup sugar
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup sugar (for streusel)
  • 1/3 cup flour (for streusel)
  • 2 tablespoons butter (for streusel)
  • 1 teaspoon cinnamon (optional)


Instructions

  1. Brown the butter until it’s golden and smells nutty; let it cool.
  2. In a bowl, mix dry ingredients: flour, sugar, baking soda, and salt.
  3. In another bowl, combine pumpkin puree, eggs, sugar, and vanilla.
  4. Stir the wet ingredients into the dry ingredients until just combined.
  5. Prepare the streusel by mixing flour, sugar, and cold butter until pea-sized pieces form.
  6. Pour the batter into a loaf pan, sprinkle with streusel topping.
  7. Bake at 350°F (175°C) for 60 minutes or until a toothpick comes out clean.
