Description

A comforting and hearty soup made with tender beef, vibrant vegetables, and a rich broth, perfect for cozy gatherings.


Ingredients

  • 2 lbs chuck roast, cut into chunks
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 bell pepper, diced
  • 4 cups beef broth
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp oregano
  • Salt and pepper to taste
  • Fresh cilantro, for garnish
  • Lime wedges, for serving
  • Fresh tortillas, for serving


Instructions

  1. In a large pot, sear the beef chunks over medium-high heat until browned on all sides. Remove from pot and set aside.
  2. Add chopped onion, garlic, carrots, celery, and bell pepper to the pot and sauté until softened.
  3. Return the beef to the pot and add beef broth, chili powder, cumin, oregano, salt, and pepper.
  4. Bring to a boil, then reduce heat and let it simmer for about 30 minutes until the beef is tender.
  5. Serve hot, garnished with cilantro, and with lime wedges and fresh tortillas on the side.

Notes

Let the soup sit for a few minutes before serving to allow flavors to meld. For a spicier version, add sliced jalapeños on the side.
