Ingredients
- 2 lbs chuck roast, cut into chunks
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 bell pepper, diced
- 4 cups beef broth
- 1 tsp chili powder
- 1 tsp cumin
- 1 tsp oregano
- Salt and pepper to taste
- Fresh cilantro, for garnish
- Lime wedges, for serving
- Fresh tortillas, for serving
Instructions
- In a large pot, sear the beef chunks over medium-high heat until browned on all sides. Remove from pot and set aside.
- Add chopped onion, garlic, carrots, celery, and bell pepper to the pot and sauté until softened.
- Return the beef to the pot and add beef broth, chili powder, cumin, oregano, salt, and pepper.
- Bring to a boil, then reduce heat and let it simmer for about 30 minutes until the beef is tender.
- Serve hot, garnished with cilantro, and with lime wedges and fresh tortillas on the side.
Notes
Let the soup sit for a few minutes before serving to allow flavors to meld. For a spicier version, add sliced jalapeños on the side.
