Description

Ingredients

  • 4 large eggs
  • 1/2 cup bell peppers, diced
  • 1/4 cup onions, diced
  • 1/4 cup tomatoes, diced
  • 1/4 cup cheese, shredded (cheddar or Mexican blend)
  • 1 tablespoon olive oil
  • Salt and pepper to taste


Instructions

  1. Whisk the eggs in a bowl until fluffy.
  2. Heat olive oil in a non-stick skillet over medium heat.
  3. Sauté bell peppers, onions, and tomatoes until softened.
  4. Pour the whisked eggs into the skillet and cook until just set.
  5. Add the sautéed veggies and cheese to one half of the omelette.
  6. Fold the omelette in half and cook for an additional minute.
  7. Serve hot with a side of crispy tortillas and guacamole or salsa.
