Ingredients
- 4 large eggs

Instructions
- Whisk the eggs in a bowl until fluffy.
- Heat olive oil in a non-stick skillet over medium heat.
- Sauté bell peppers, onions, and tomatoes until softened.
- Pour the whisked eggs into the skillet and cook until just set.
- Add the sautéed veggies and cheese to one half of the omelette.
- Fold the omelette in half and cook for an additional minute.
- Serve hot with a side of crispy tortillas and guacamole or salsa.
