A delightful twist on the classic Italian dessert featuring crispy shell and creamy ricotta filling.
Ingredients
- 1 cup all-purpose flour
- 2 tablespoons granulated sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 4 tablespoons unsalted butter, softened
- 1/4 cup ricotta cheese
- 1/4 cup powdered sugar
- 1/2 teaspoon vanilla extract
- 1/4 cup mini chocolate chips
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, combine flour, sugar, baking powder, and salt.
- Add the butter and mix until crumbly.
- Press the dough into a greased mini muffin tin.
- Bake for 12-15 minutes until golden brown.
- Allow to cool before filling.
- In another bowl, combine ricotta, powdered sugar, and vanilla. Mix in chocolate chips.
- Fill the cooled shells with the ricotta mixture.
- Dust with powdered sugar before serving.
Notes
Chill the dough before baking for best results. Store in an airtight container in the refrigerator for up to 2 days.
