Description

These mint chocolate chip cookies combine refreshing peppermint with rich chocolate, creating a soft and slightly chewy cookie perfect for any occasion.


Ingredients

  • 1 cup (226 g) unsalted butter, softened
  • 3/4 cup (150 g) granulated sugar
  • 3/4 cup (150 g) packed brown sugar
  • 2 large eggs, room temperature
  • 1 tsp vanilla extract
  • 1 tsp peppermint extract
  • 2 1/4 cups (280 g) all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 cups mint-flavored chips or chopped mint chocolate


Instructions

  1. Cream the butter, granulated sugar, and brown sugar together until light and fluffy (about 3-4 minutes).
  2. Add eggs, vanilla extract, and peppermint extract; mix until combined.
  3. In a separate bowl, whisk together flour, baking soda, and salt.
  4. Add the dry mixture to the wet ingredients on low speed until just combined.
  5. Fold in the mint-flavored chips.
  6. Chill the dough for 30-60 minutes (or overnight).
  7. Preheat the oven to 350°F (175°C).
  8. Portion out the dough onto parchment-lined baking sheets using a cookie scoop.
  9. Bake for 10-12 minutes until edges are set but centers are soft.
  10. Cool on the baking sheet for 5 minutes before transferring to a cooling rack.
