Description

A flavorful and tender slow-cooked pot roast infused with zesty pepperoncini and savory spices, perfect for busy weeknights or family gatherings.


Ingredients

  • 3-4 lbs beef chuck roast
  • 1 cup beef broth
  • 1 packet ranch dressing mix
  • 1 jar (16 oz) pepperoncini, sliced with brine
  • Fresh parsley for garnish


Instructions

  1. Season the beef chuck roast generously with salt and pepper.
  2. In a skillet over high heat, sear the roast on all sides until browned.
  3. Place the seared roast in the slow cooker.
  4. Top with sliced pepperoncini, their brine, and the ranch dressing mix.
  5. Add the beef broth to the slow cooker.
  6. Cover and cook on low for 8 hours or on high for 4 hours until the meat is tender.
  7. Serve directly from the slow cooker, garnished with fresh parsley.

Notes

For milder flavor, rinse pepperoncini before adding. Leftovers work well in sandwiches or tacos.
