Ingredients
- 3-4 lbs beef chuck roast
- 1 cup beef broth
- 1 packet ranch dressing mix
- 1 jar (16 oz) pepperoncini, sliced with brine
- Fresh parsley for garnish
Instructions
- Season the beef chuck roast generously with salt and pepper.
- In a skillet over high heat, sear the roast on all sides until browned.
- Place the seared roast in the slow cooker.
- Top with sliced pepperoncini, their brine, and the ranch dressing mix.
- Add the beef broth to the slow cooker.
- Cover and cook on low for 8 hours or on high for 4 hours until the meat is tender.
- Serve directly from the slow cooker, garnished with fresh parsley.
Notes
For milder flavor, rinse pepperoncini before adding. Leftovers work well in sandwiches or tacos.
