Description

A rich, creamy chocolate square with a bright coffee kick, this mocha fudge comes together quickly and is perfect for coffee lovers.


Ingredients

  • 12 oz (340 g) semi-sweet chocolate chips
  • 14 oz (400 g) sweetened condensed milk
  • 2 tablespoons unsalted butter
  • 2 tablespoons unsweetened cocoa powder
  • 1–2 teaspoons instant espresso
  • 1 tablespoon hot water
  • 1 teaspoon vanilla extract
  • Pinch of fine salt
  • 1/2 cup chopped toasted walnuts (optional)


Instructions

  1. Line an 8×8-inch square pan with parchment paper, leaving an overhang.
  2. In a heavy-bottomed saucepan, over low heat, combine chocolate chips, sweetened condensed milk, butter, and cocoa powder.
  3. Stir constantly until the mixture simmers (do not boil), keeping the temperature around 180°F (82°C).
  4. Dissolve instant espresso in hot water and whisk it in off the heat, then add vanilla and salt.
  5. Pour into the prepared pan, smooth the top, and optionally scatter walnuts.
  6. Chill uncovered in the fridge until firm, about 2-3 hours.
  7. For cleaner cuts, chill an extra hour and let sit for 5 minutes at room temperature before slicing.
