Description

Ingredients

  • 1 cup sweetened shredded coconut
  • 1 cup high-quality chocolate (at least 60% cocoa)
  • 1/2 cup sugar
  • 1/4 cup all-purpose flour
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • Parchment paper (for baking)


Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Melt the chocolate in a heatproof bowl over simmering water or in the microwave.
  3. In a mixing bowl, combine the melted chocolate, coconut, sugar, flour, eggs, and vanilla extract. Mix well.
  4. Spoon the mixture onto the prepared baking sheet, spacing them evenly apart.
  5. Bake for 25 minutes or until set and slightly firm to the touch.
  6. Remove from the oven and let cool for a few minutes before transferring to a wire rack to cool completely.
  7. Chill in the refrigerator for at least 1 hour before serving.
