Ingredients
- 1 cup sweetened shredded coconut
- 1 cup high-quality chocolate (at least 60% cocoa)
- 1/2 cup sugar
- 1/4 cup all-purpose flour
- 2 large eggs
- 1 teaspoon vanilla extract
- Parchment paper (for baking)
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Melt the chocolate in a heatproof bowl over simmering water or in the microwave.
- In a mixing bowl, combine the melted chocolate, coconut, sugar, flour, eggs, and vanilla extract. Mix well.
- Spoon the mixture onto the prepared baking sheet, spacing them evenly apart.
- Bake for 25 minutes or until set and slightly firm to the touch.
- Remove from the oven and let cool for a few minutes before transferring to a wire rack to cool completely.
- Chill in the refrigerator for at least 1 hour before serving.
