Quick and festive no-bake treats made with melted white chocolate, crispy cereal, and coconut, shaped in a muffin pan for perfect portions.
Ingredients
- 300 g (10 oz) white chocolate
- 4 cups Rice Krispies cereal
- 1 cup desiccated coconut
- 1/2 cup chopped pretzels or dried fruit (optional)
- 1 tsp neutral oil (optional)
- Sprinkles or chopped nuts for topping (optional)
Instructions
- Gently melt the white chocolate in a microwave-safe bowl in 20-30 second bursts at 50% power, stirring between intervals until smooth.
- Or, melt in a double boiler over simmering water while keeping the temperature under 40–45°C (104–113°F).
- Fold the melted chocolate into the Rice Krispies, desiccated coconut, and optional mix-ins.
- Spoon generous tablespoons into a lined 12-cup muffin pan.
- Top with sprinkles or chopped nuts if desired.
- Chill in the fridge for 30-45 minutes until set.
Notes
Use good-quality white chocolate for best results. Consider using silicone liners for easy removal.
