Description

Quick and festive no-bake treats made with melted white chocolate, crispy cereal, and coconut, shaped in a muffin pan for perfect portions.


Ingredients

  • 300 g (10 oz) white chocolate
  • 4 cups Rice Krispies cereal
  • 1 cup desiccated coconut
  • 1/2 cup chopped pretzels or dried fruit (optional)
  • 1 tsp neutral oil (optional)
  • Sprinkles or chopped nuts for topping (optional)


Instructions

  1. Gently melt the white chocolate in a microwave-safe bowl in 20-30 second bursts at 50% power, stirring between intervals until smooth.
  2. Or, melt in a double boiler over simmering water while keeping the temperature under 40–45°C (104–113°F).
  3. Fold the melted chocolate into the Rice Krispies, desiccated coconut, and optional mix-ins.
  4. Spoon generous tablespoons into a lined 12-cup muffin pan.
  5. Top with sprinkles or chopped nuts if desired.
  6. Chill in the fridge for 30-45 minutes until set.

Notes

Use good-quality white chocolate for best results. Consider using silicone liners for easy removal.
