Ingredients

  • 2 cups all-purpose flour
  • 1 cup fresh mulberries
  • 1 cup shredded coconut
  • 3/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup coconut oil, melted
  • 1 cup milk
  • 2 large eggs


Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a muffin tin with liners or a light greasing.
  2. In a bowl, mix the dry ingredients: flour, sugar, baking powder, and salt.
  3. In another bowl, mix the wet ingredients: coconut oil, milk, and eggs.
  4. Combine the wet and dry mixtures, stirring until just combined.
  5. Fold in mulberries and shredded coconut gently.
