Ingredients
- 2 cups all-purpose flour
- 1 cup fresh mulberries
- 1 cup shredded coconut
- 3/4 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup coconut oil, melted
- 1 cup milk
- 2 large eggs
Instructions
- Preheat your oven to 375°F (190°C) and prepare a muffin tin with liners or a light greasing.
- In a bowl, mix the dry ingredients: flour, sugar, baking powder, and salt.
- In another bowl, mix the wet ingredients: coconut oil, milk, and eggs.
- Combine the wet and dry mixtures, stirring until just combined.
- Fold in mulberries and shredded coconut gently.
- Fill the muffin tin with batter and bake for 20 minutes or until a toothpick comes out clean.
Notes
Use fresh mulberries for best flavor. Don’t over-mix the batter to ensure fluffy muffins.
