A comforting and nutritious soup featuring napa cabbage and tofu in a flavorful broth.
Ingredients
- 1 tablespoon vegetable oil
- 2 cloves garlic, minced
- 1-inch piece of ginger, minced
- 4 cups vegetable broth
- 4 cups napa cabbage, chopped
- 14 ounces firm tofu, cubed
- 2 tablespoons soy sauce
- Salt, to taste
- Fresh scallions, for garnish
- Sesame seeds, for garnish
Instructions
- Heat the vegetable oil in a pot over medium heat.
- Add the minced garlic and ginger; sauté until fragrant.
- Pour in the vegetable broth and bring to a simmer.
- Add the chopped napa cabbage and cook until it begins to soften.
- Introduce the cubed tofu and soy sauce into the pot; gently stir.
- Season with salt to taste, and simmer for a few more minutes to let flavors meld.
- Serve hot, garnished with scallions and sesame seeds.
Notes
For a spicier version, add sliced chili peppers or chili oil. Ensure tofu is firm for the best texture.
