Description

A comforting and nutritious soup featuring napa cabbage and tofu in a flavorful broth.


Ingredients

  • 1 tablespoon vegetable oil
  • 2 cloves garlic, minced
  • 1-inch piece of ginger, minced
  • 4 cups vegetable broth
  • 4 cups napa cabbage, chopped
  • 14 ounces firm tofu, cubed
  • 2 tablespoons soy sauce
  • Salt, to taste
  • Fresh scallions, for garnish
  • Sesame seeds, for garnish


Instructions

  1. Heat the vegetable oil in a pot over medium heat.
  2. Add the minced garlic and ginger; sauté until fragrant.
  3. Pour in the vegetable broth and bring to a simmer.
  4. Add the chopped napa cabbage and cook until it begins to soften.
  5. Introduce the cubed tofu and soy sauce into the pot; gently stir.
  6. Season with salt to taste, and simmer for a few more minutes to let flavors meld.
  7. Serve hot, garnished with scallions and sesame seeds.

Notes

For a spicier version, add sliced chili peppers or chili oil. Ensure tofu is firm for the best texture.
