Delightful no bake cookies with a rich blend of chocolate and coconut, perfect for a quick sweet treat.
Ingredients
- ½ cup unsalted butter
- 2 cups granulated sugar
- ½ cup unsweetened cocoa powder
- ½ cup milk
- ½ tsp vanilla extract
- 3 cups quick oats
- 1 cup shredded sweetened coconut
Instructions
- Combine butter, sugar, cocoa, and milk in a saucepan. Stir well and bring to a rolling boil.
- Boil for 1½ minutes, then remove from heat.
- Stir in the vanilla extract.
- Pour the mixture over the oats and shredded coconut in a mixing bowl. Stir until everything is fully coated.
- Drop spoonfuls of the mixture onto a parchment-lined baking sheet. Flatten slightly if desired.
- Chill for 20 minutes until firm. Transfer cookies to an airtight container and store in the refrigerator.
