Description
A refreshing Old Bay Shrimp Salad that’s perfect for summer picnics or light weeknight dinners, combining bold flavors with tender shrimp.
Ingredients
- 1 lb shrimp (fresh or frozen)
- 2 tablespoons Old Bay seasoning
- 1/4 cup mayonnaise
- 2 tablespoons lemon juice
- 1 teaspoon Dijon mustard
- 1 cup diced bell peppers
- 1 cup diced celery
- Salt and pepper to taste
Instructions
- Boil the shrimp in seasoned water until they turn pink and opaque, about 2-3 minutes.
- Cool the shrimp in ice water and then dice.
- In a bowl, mix the shrimp with diced vegetables, Old Bay seasoning, mayonnaise, lemon juice, and Dijon mustard.
- Chill the salad for 15 minutes before serving to meld the flavors.
- Serve on mixed greens or in avocado halves as desired.
