Description

A quick and easy one-pan meal combining savory chicken, fluffy rice, and a sweet barbecue sauce, perfect for busy nights.


Ingredients

  • 1 pound Chicken Thighs or Breasts
  • 1 cup White Rice
  • 1/2 cup Honey BBQ Sauce
  • 1 medium Onion
  • 2 cloves Garlic
  • 1 tablespoon Hot Sauce
  • 1/2 cup Cheese (optional)
  • 2 cups Water or Chicken Broth


Instructions

  1. Cut chicken into bite-sized pieces and season with salt and pepper.
  2. In a large pan, heat oil over medium heat, and cook chopped onion for 3-4 minutes until soft.
  3. Add minced garlic and cook for another minute.
  4. Add chicken and cook until golden brown, about 5-7 minutes.
  5. Stir in rice, honey BBQ sauce, and hot sauce until well mixed.
  6. Pour in water (or broth) and bring to a boil.
  7. Reduce heat to low, cover, and let simmer for about 20 minutes.
  8. If using cheese, sprinkle on top and let it melt before serving.
  9. Let sit for a few minutes before serving hot.

Notes

Use a good quality honey BBQ sauce for best flavor. For added nutrition, mix in some frozen vegetables during the last 5 minutes of cooking.
