Description
A quick and easy one-pan meal featuring tender chicken and pasta cooked in a sweet honey BBQ sauce.
Ingredients
- 1 lb boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
- 8 oz uncooked penne pasta
- 1 cup honey BBQ sauce
- 2 tablespoons olive oil
- 1/2 cup low-sodium chicken broth
- 1 tablespoon soy sauce (optional)
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Heat olive oil in a large non-stick skillet over medium-high heat.
- Add chicken, season with salt, pepper, smoked paprika, and garlic powder. Sear until golden brown and fully cooked. Remove chicken from the pan and set aside.
- Pour in chicken broth and deglaze the pan by scraping up the brown bits.
- Stir in honey BBQ sauce and soy sauce (if using). Let it simmer for 2–3 minutes.
- Add uncooked penne pasta and enough water to just cover the pasta (about 1 to 1½ cups). Cover and simmer for 12–15 minutes, stirring occasionally, until the pasta is tender.
- Return the chicken to the skillet, stir everything together, and let it simmer for another 2–3 minutes to combine the flavors.
- Taste and adjust seasoning. Add any garnishes if desired.
Notes
Feel free to add your favorite veggies, like bell peppers or broccoli, for more nutrition and color.
