Description

A quick and easy one-pan meal featuring tender chicken and pasta cooked in a sweet honey BBQ sauce.


Ingredients

  • 1 lb boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
  • 8 oz uncooked penne pasta
  • 1 cup honey BBQ sauce
  • 2 tablespoons olive oil
  • 1/2 cup low-sodium chicken broth
  • 1 tablespoon soy sauce (optional)
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste


Instructions

  1. Heat olive oil in a large non-stick skillet over medium-high heat.
  2. Add chicken, season with salt, pepper, smoked paprika, and garlic powder. Sear until golden brown and fully cooked. Remove chicken from the pan and set aside.
  3. Pour in chicken broth and deglaze the pan by scraping up the brown bits.
  4. Stir in honey BBQ sauce and soy sauce (if using). Let it simmer for 2–3 minutes.
  5. Add uncooked penne pasta and enough water to just cover the pasta (about 1 to 1½ cups). Cover and simmer for 12–15 minutes, stirring occasionally, until the pasta is tender.
  6. Return the chicken to the skillet, stir everything together, and let it simmer for another 2–3 minutes to combine the flavors.
  7. Taste and adjust seasoning. Add any garnishes if desired.

Notes

Feel free to add your favorite veggies, like bell peppers or broccoli, for more nutrition and color.
