Description
A quick and easy one-pot meal that combines the classic flavors of chicken parmesan with comforting pasta.
Ingredients
- 1 pound chicken breasts, diced
- 2 tablespoons olive oil
- 3 garlic cloves, finely chopped
- 1 teaspoon dried Italian herbs
- Salt and pepper, to taste
- 12 oz penne or rotini noodles
- 1 cup marinara sauce
- 4 cups chicken stock
- 1 cup shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- Fresh basil leaves, chopped (optional, for topping)
Instructions
- Heat olive oil in a large pot over medium heat. Cook the diced chicken, Italian herbs, garlic, salt, and pepper until the chicken is no longer pink, about 5 to 7 minutes.
- Add marinara sauce and pasta to the pot, then pour in the chicken stock. Lower the heat to simmer.
- Cover and cook for 12 to 15 minutes, stirring occasionally, until the noodles are tender and most of the liquid is absorbed.
- Remove from heat and stir in mozzarella and Parmesan until melted and creamy.
- Top with fresh basil before serving.
Notes
Use pre-cooked rotisserie chicken to save time. Feel free to add veggies like spinach or broccoli for a healthier option.
