Description

A quick and easy one-pot meal that combines the classic flavors of chicken parmesan with comforting pasta.


Ingredients

  • 1 pound chicken breasts, diced
  • 2 tablespoons olive oil
  • 3 garlic cloves, finely chopped
  • 1 teaspoon dried Italian herbs
  • Salt and pepper, to taste
  • 12 oz penne or rotini noodles
  • 1 cup marinara sauce
  • 4 cups chicken stock
  • 1 cup shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • Fresh basil leaves, chopped (optional, for topping)


Instructions

  1. Heat olive oil in a large pot over medium heat. Cook the diced chicken, Italian herbs, garlic, salt, and pepper until the chicken is no longer pink, about 5 to 7 minutes.
  2. Add marinara sauce and pasta to the pot, then pour in the chicken stock. Lower the heat to simmer.
  3. Cover and cook for 12 to 15 minutes, stirring occasionally, until the noodles are tender and most of the liquid is absorbed.
  4. Remove from heat and stir in mozzarella and Parmesan until melted and creamy.
  5. Top with fresh basil before serving.

Notes

Use pre-cooked rotisserie chicken to save time. Feel free to add veggies like spinach or broccoli for a healthier option.
