Ingredients
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 carrots, chopped
- 1 cup lentils, rinsed
- 4 cups vegetable broth
- Salt and pepper to taste
- Fresh parsley for garnish
- Optional: coconut milk for creaminess
Instructions
- Heat olive oil in a pot over medium heat. Sauté onions and garlic until fragrant.
- Add chopped carrots and lentils. Stir to combine.
- Pour in the vegetable broth and bring to a boil.
- Reduce heat and let it simmer until lentils are tender, about 25 minutes.
- Use an immersion blender to blend the soup until creamy. Adjust consistency with more broth if necessary.
- Season with salt and pepper to taste. Serve hot, garnished with fresh parsley and a drizzle of olive oil.
