Description

A nourishing and creamy soup made with lentils and carrots, perfect for chilly evenings.


Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 carrots, chopped
  • 1 cup lentils, rinsed
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • Fresh parsley for garnish
  • Optional: coconut milk for creaminess


Instructions

  1. Heat olive oil in a pot over medium heat. Sauté onions and garlic until fragrant.
  2. Add chopped carrots and lentils. Stir to combine.
  3. Pour in the vegetable broth and bring to a boil.
  4. Reduce heat and let it simmer until lentils are tender, about 25 minutes.
  5. Use an immersion blender to blend the soup until creamy. Adjust consistency with more broth if necessary.
  6. Season with salt and pepper to taste. Serve hot, garnished with fresh parsley and a drizzle of olive oil.
