Ingredients
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 medium carrots, chopped
- 1 cup lentils (brown or green), rinsed
- 4 cups vegetable broth
- 1 tablespoon lemon juice (optional)
- Salt and pepper to taste
Instructions
- In a pot, heat olive oil over medium heat. Sauté onion and garlic until fragrant.
- Add chopped carrots and rinsed lentils, stirring to combine.
- Pour in the vegetable broth and bring to a boil.
- Reduce heat and let simmer until carrots and lentils are tender.
- Blend the soup until creamy and season with salt, pepper, and lemon juice.
