Description

A comforting and nutritious soup featuring lentils and carrots, blended to creamy perfection.


Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 medium carrots, chopped
  • 1 cup lentils (brown or green), rinsed
  • 4 cups vegetable broth
  • 1 tablespoon lemon juice (optional)
  • Salt and pepper to taste


Instructions

  1. In a pot, heat olive oil over medium heat. Sauté onion and garlic until fragrant.
  2. Add chopped carrots and rinsed lentils, stirring to combine.
  3. Pour in the vegetable broth and bring to a boil.
  4. Reduce heat and let simmer until carrots and lentils are tender.
