Ingredients
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 8 ounces cremini mushrooms, sliced
- 8 ounces button mushrooms, sliced
- 2 cups vegetable broth
- 3 tablespoons soy sauce
- 8 ounces egg-free pasta
- ½ cup plant-based cream
- Fresh parsley, for garnish
Instructions
- Heat olive oil in a large skillet over medium heat. Sauté the onion and garlic until fragrant.
- Add the sliced mushrooms and cook until golden brown.
- Pour in vegetable broth and soy sauce, then add the pasta.
- Simmer until the pasta is tender.
- Stir in plant-based cream and cook until heated through.
- Serve hot, garnished with fresh parsley.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Can also be frozen for up to 2 months. Reheat gently on the stovetop or microwave with a splash of water or broth.
