Description

A cozy, hearty, and plant-based dish made with earthy mushrooms and creamy sauce, all cooked in one skillet for easy cleanup.


Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 8 ounces cremini mushrooms, sliced
  • 8 ounces button mushrooms, sliced
  • 2 cups vegetable broth
  • 3 tablespoons soy sauce
  • 8 ounces egg-free pasta
  • ½ cup plant-based cream
  • Fresh parsley, for garnish


Instructions

  1. Heat olive oil in a large skillet over medium heat. Sauté the onion and garlic until fragrant.
  2. Add the sliced mushrooms and cook until golden brown.
  3. Pour in vegetable broth and soy sauce, then add the pasta.
  4. Simmer until the pasta is tender.
  5. Stir in plant-based cream and cook until heated through.
  6. Serve hot, garnished with fresh parsley.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Can also be frozen for up to 2 months. Reheat gently on the stovetop or microwave with a splash of water or broth.
