Ingredients
- 4 salmon fillets
- 1 cup orzo
- 2 cups chicken broth
- 1 lemon, juiced
- 2 cloves garlic, minced
- 1 small onion, chopped
- Salt and pepper to taste
- Fresh herbs (parsley or dill) for garnish
Instructions
- In a heavy-bottomed skillet, sauté garlic and onion until translucent.
- Add the orzo and stir for 1-2 minutes.
- Pour in the chicken broth and lemon juice, bring to a simmer.
- Carefully place the salmon fillets on top, season with salt and pepper, cover, and simmer until cooked through.
