Ingredients
- 4 salmon fillets
- 1 cup orzo
- 2 cups chicken or vegetable broth
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 shallot, diced
- Juice of 1 lemon
- Salt and pepper to taste
- Fresh herbs (parsley or dill) for garnish
Instructions
- Heat olive oil in a skillet over medium-high heat.
- Sear the salmon fillets skin-side down until golden brown, about 4-5 minutes.
- Remove the salmon, and sauté garlic and shallots until fragrant.
- Add orzo and broth to the skillet, stirring to combine.
- Cook until the orzo absorbs the liquid, about 10-12 minutes.
- Gently nestle the salmon back into the skillet and allow it to cook until it reaches an internal temperature of 145°F.
- Remove from heat, add lemon juice, and garnish with fresh herbs.

For best results, use fresh herbs and good quality salmon. Adapt cooking times based on the thickness of the salmon fillets.
