Description

An easy and delicious slow cooker recipe for chicken tacos, perfect for busy days.


Ingredients

  • 2 pounds Boneless, Skinless Chicken Breasts
  • 1 packet Taco Seasoning
  • 1 cup Chicken Broth
  • 1 Red Bell Pepper (sliced)
  • 1 Green Bell Pepper (sliced)
  • 1 Medium Onion (chopped)
  • 1 Fresh Lime (juice)
  • 1 handful Fresh Cilantro (chopped)
  • 8 small Corn or Flour Tortillas
  • Optional Toppings: Shredded cheese, sour cream, avocado, or salsa


Instructions

  1. Prepare your ingredients: chop the onions and bell peppers, and set them aside.
  2. In the base of your slow cooker, place the chopped onions and bell peppers.
  3. Add the chicken breasts on top of the vegetables.
  4. Sprinkle the taco seasoning evenly over the chicken breasts.
  5. Pour the chicken broth into the slow cooker.
  6. Squeeze the juice of one lime over the contents of the slow cooker.
  7. Cover and set the slow cooker to low heat for 6 to 8 hours or high heat for 4 to 5 hours.
  8. Check the chicken during the last 30 minutes of cooking, it should shred easily with a fork.
  9. Once cooked, shred the chicken directly in the slow cooker.
  10. Warm the tortillas in a dry skillet or microwave.
  11. Serve the shredded chicken mixture onto each tortilla and top with fresh cilantro and any additional toppings.

Notes

For extra flavor, let the chicken marinate in the taco seasoning and broth for a few hours before cooking. Serve with lime wedges for a fresh taste.
