Description

Quick and tasty Pesto Chicken Flatbread topped with juicy chicken, basil pesto, and melty cheese, perfect for busy evenings or entertaining.


Ingredients

  • 1 Flatbread (Store-bought or homemade)
  • 2 pieces Chicken Breasts (Boneless, skinless)
  • 1 tablespoon Olive Oil (Or avocado oil as substitute)
  • To taste Salt
  • To taste Pepper
  • 1/2 cup Basil Pesto (Fresh or store-bought)
  • 1 cup Mozzarella Cheese (Shredded; provolone can be used)
  • 1 cup Cherry Tomatoes (Halved or diced)
  • 1/4 cup Parmesan Cheese (Grated)
  • To taste Fresh Basil Leaves (Optional for garnish)


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Season the chicken breasts with salt and pepper.
  3. In a skillet, heat the olive oil over medium heat. Add the chicken breasts and cook for 5-7 minutes on each side or until fully cooked. Remove from heat and let them cool slightly.
  4. Slice the cooked chicken into strips.
  5. On the flatbread, spread the basil pesto evenly.
  6. Layer the sliced chicken on top of the pesto.
  7. Sprinkle the mozzarella cheese over the chicken.
  8. Add the cherry tomatoes and then top with grated Parmesan cheese.
  9. Place the flatbread on a baking sheet and bake in the preheated oven for about 10 minutes, or until the cheese is bubbly and golden.
