Description

A moist and sweet cake combining the tropical flavors of pineapple with the earthy notes of carrot, perfectly spiced for any occasion.


Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 cup vegetable oil
  • 1 cup sugar
  • 4 large eggs
  • 1 cup crushed fresh pineapple, drained
  • 2 cups grated carrots
  • 1 cup chopped walnuts (optional)
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract


Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch pan.
  2. In one bowl, mix flour, baking soda, salt, and cinnamon.
  3. In another bowl, whisk together oil, sugar, and eggs until well combined.
  4. Add the drained pineapple and grated carrots to the wet mixture and stir until incorporated.
  5. Gradually fold in the dry ingredients until just combined.
  6. Pour the batter into the prepared pan and spread evenly.
  7. Bake for 30 minutes or until a toothpick comes out clean.
