Ingredients
- 1 lb chicken breast, diced
- 1 cup pineapple chunks (fresh or canned)
- 2 cups cooked rice
- 3 cloves garlic, minced
- 1/4 cup soy sauce
- 1 cup chicken broth
- 1 tablespoon ginger, grated
- Salt and pepper, to taste
- Chopped green onions, for garnish
- Fresh cilantro, for garnish
Instructions
- Heat a non-stick skillet over medium heat.
- Add diced chicken and sauté until golden brown.
- Stir in minced garlic and pineapple chunks, cooking for an additional 2-3 minutes.
- Add cooked rice, soy sauce, chicken broth, and ginger to the skillet.
- Mix well and let it simmer until heated through, about 5-7 minutes.
- Season with salt and pepper to taste.
- Garnish with green onions and cilantro before serving.
