Description

A visually stunning and delicious Pink Dragon Fruit Layer Cake perfect for celebrations or treating yourself.


Ingredients

  • 2 cups All-Purpose Flour (or gluten-free baking mix)
  • 1 cup Granulated Sugar (adjust to taste)
  • 1/2 cup Unsalted Butter
  • 4 Eggs (or flax eggs for vegan)
  • 2 teaspoons Vanilla Extract
  • 1 cup Dragon Fruit (fresh or frozen)
  • 1/2 cup Milk (or plant-based milk for dairy-free)
  • 1 cup Heavy Cream
  • 1/2 cup Dragon Fruit Puree
  • 1/2 cup Granulated Sugar (for frosting, adjust to taste)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour two 9-inch round cake pans.
  3. Cream together the unsalted butter and granulated sugar until light and fluffy.
  4. Beat in the eggs one at a time, mixing well after each addition.
  5. Stir in the vanilla extract and dragon fruit.
  6. Add the flour, mixing until just combined.
  7. Gradually stir in the milk until you have a smooth batter.
  8. Pour the batter evenly into the prepared cake pans.
  9. Bake for 25-30 minutes or until a toothpick inserted comes out clean.
  10. Allow the cakes to cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
  11. For frosting, whip the heavy cream and granulated sugar until soft peaks form.
  12. Gently fold in the dragon fruit puree.
  13. Once the cakes are cool, place one layer on a serving plate and spread frosting on top.
  14. Place the second layer on top and frost the top and sides of the cake.
  15. Slice and serve with optional fresh dragon fruit slices as garnish.

Notes

Store leftover cake in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
