A visually stunning and delicious Pink Dragon Fruit Layer Cake perfect for celebrations or treating yourself.
Ingredients
- 2 cups All-Purpose Flour (or gluten-free baking mix)
- 1 cup Granulated Sugar (adjust to taste)
- 1/2 cup Unsalted Butter
- 4 Eggs (or flax eggs for vegan)
- 2 teaspoons Vanilla Extract
- 1 cup Dragon Fruit (fresh or frozen)
- 1/2 cup Milk (or plant-based milk for dairy-free)
- 1 cup Heavy Cream
- 1/2 cup Dragon Fruit Puree
- 1/2 cup Granulated Sugar (for frosting, adjust to taste)
Instructions
- Preheat your oven to 350°F (175°C).
- Grease and flour two 9-inch round cake pans.
- Cream together the unsalted butter and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, mixing well after each addition.
- Stir in the vanilla extract and dragon fruit.
- Add the flour, mixing until just combined.
- Gradually stir in the milk until you have a smooth batter.
- Pour the batter evenly into the prepared cake pans.
- Bake for 25-30 minutes or until a toothpick inserted comes out clean.
- Allow the cakes to cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
- For frosting, whip the heavy cream and granulated sugar until soft peaks form.
- Gently fold in the dragon fruit puree.
- Once the cakes are cool, place one layer on a serving plate and spread frosting on top.
- Place the second layer on top and frost the top and sides of the cake.
- Slice and serve with optional fresh dragon fruit slices as garnish.
Notes
Store leftover cake in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
