Description

Tender and slightly sweet pumpkin biscuits with flaky layers, perfect for breakfast or a snack.


Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1–2 teaspoons ground cinnamon
  • 2 tablespoons sugar
  • 6 tablespoons cold unsalted butter
  • 3/4 cup pumpkin puree
  • 1/3–1/2 cup cold milk (or buttermilk)


Instructions

  1. Preheat oven to 425°F.
  2. Whisk together the flour, baking powder, baking soda, salt, cinnamon, and sugar.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Stir in the pumpkin puree and cold milk until a shaggy dough forms.
  5. Turn the dough onto a floured surface, pat it to 3/4–1 inch thickness, and cut into 2–3 inch rounds.
  6. Place on a parchment-lined baking sheet.
  7. Bake for 12–15 minutes until golden.

Notes

Keep butter cold. Handle the dough gently to preserve its rise.
