Description

A cozy and heartwarming pumpkin curry enriched with coconut milk and vibrant spices, perfect for a nutritious dinner.


Ingredients

  • 1 medium sugar pumpkin, cubed
  • 1 can (400ml) coconut milk
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon curry powder
  • 1 teaspoon ginger, grated
  • Salt to taste
  • 1 tablespoon olive oil
  • Fresh cilantro for garnish
  • Optional: Red pepper flakes for heat


Instructions

  1. In a large pot, heat olive oil over medium heat. Sauté chopped onion and minced garlic until fragrant.
  2. Add curry powder and grated ginger, and cook for another minute.
  3. Stir in the cubed pumpkin and season with salt.
  4. Pour in the coconut milk and bring to a simmer.
  5. Reduce heat and let the curry simmer for about 25 minutes, until the pumpkin is tender.
  6. Taste and adjust seasoning. Serve over rice or quinoa, garnished with fresh cilantro.

Notes

Use fresh sugar pumpkin for best flavor; canned pumpkin can be substituted if needed. Great served with jasmine rice or quinoa.
