Delightful bars combining creamy pumpkin filling, rich chocolate topping, and a simple cookie crust, perfect for fall gatherings.
Ingredients
- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 1 cup pumpkin puree
- 2 large eggs
- 1 cup sugar
- 1 teaspoon cinnamon
- ½ teaspoon nutmeg
- ¼ teaspoon cloves
- 1 cup chocolate chips
Instructions
- Preheat the oven to 350°F (175°C) and prepare a baking pan with parchment paper.
- In a bowl, mix the graham cracker crumbs with melted butter and press into the bottom of the prepared pan for the crust.
- In another bowl, whisk together pumpkin puree, eggs, sugar, cinnamon, nutmeg, and cloves until smooth.
- Pour the filling mixture over the crust and sprinkle chocolate chips on top.
- Bake in the preheated oven for 30 minutes or until the filling is set.
- Allow to cool completely, then refrigerate for at least an hour before slicing into bars.
Notes
For cleaner cuts, let the bars cool completely and refrigerate before slicing. Optionally, serve with whipped cream or ice cream.
