Ingredients
- 1 cup unsalted butter, softened
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 1 cup pumpkin puree
- 1 teaspoon vanilla extract
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon salt
- 1 cup mini chocolate chips
- 1 cup mini marshmallows
Instructions
- Cream together butter and sugars until light and fluffy.
- Add pumpkin puree and vanilla, mixing until well combined.
- In a separate bowl, whisk together the flour, baking soda, pumpkin pie spice, and salt.
- Gradually add the dry ingredients to the wet mixture, folding gently to avoid overmixing.
- Fold in mini chocolate chips and marshmallows.
- Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
- Bake at 350°F (175°C) for 10-12 minutes or until lightly golden.
- Remove from the oven and let cool slightly before enjoying.
