Description

A warm and comforting mushroom soup that’s quick to prepare, infused with rich, earthy flavors, and packed with nutrients.


Ingredients

  • 2 cups fresh mushrooms, sliced (cremini, shiitake, or button)
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 1/2 cup heavy cream
  • Salt and pepper, to taste
  • Fresh parsley, for garnish


Instructions

  1. Sauté chopped onions and minced garlic in a pot until fragrant.
  2. Add sliced mushrooms and cook until tender and golden.
  3. Pour in the broth and bring to a simmer.
  4. Finish with a splash of cream, stirring until well combined.
  5. Season with salt and pepper to taste and serve warm, garnished with parsley.

Notes

For a vegan option, replace the heavy cream with coconut or almond milk. Feel free to blend the soup for a creamy bisque texture.
