Ingredients
- 2 cups fresh mushrooms, sliced (cremini, shiitake, or button)
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups vegetable or chicken broth
- 1/2 cup heavy cream
- Salt and pepper, to taste
- Fresh parsley, for garnish
Instructions
- Sauté chopped onions and minced garlic in a pot until fragrant.
- Add sliced mushrooms and cook until tender and golden.
- Pour in the broth and bring to a simmer.
- Finish with a splash of cream, stirring until well combined.
- Season with salt and pepper to taste and serve warm, garnished with parsley.
Notes
For a vegan option, replace the heavy cream with coconut or almond milk. Feel free to blend the soup for a creamy bisque texture.
