Description

A delightful blend of sweet peaches and tart raspberries nestled in a flaky, golden pie crust, perfect for any occasion.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter, cold and cubed
  • 3-4 tablespoons cold water
  • 4 ripe peaches, peeled and sliced
  • 1 cup fresh raspberries
  • 3/4 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine flour and cold butter, cutting in until the mixture resembles coarse crumbs.
  3. Add cold water, one tablespoon at a time, mixing until the dough comes together. Chill the dough for 30 minutes.
  4. Roll out the dough on a floured surface and fit it into a pie dish.
  5. In another bowl, mix peaches, raspberries, sugar, cornstarch, and lemon juice.
  6. Pour the fruit mixture into the prepared crust.
  7. Bake for 45 minutes, until the crust is golden and the juices are bubbling.
  8. Let cool before serving.
