Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup unsalted butter, cold and cubed
- 3-4 tablespoons cold water
- 4 ripe peaches, peeled and sliced
- 1 cup fresh raspberries
- 3/4 cup granulated sugar
- 2 tablespoons cornstarch
- 1 tablespoon lemon juice
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine flour and cold butter, cutting in until the mixture resembles coarse crumbs.
- Add cold water, one tablespoon at a time, mixing until the dough comes together. Chill the dough for 30 minutes.
- Roll out the dough on a floured surface and fit it into a pie dish.
- In another bowl, mix peaches, raspberries, sugar, cornstarch, and lemon juice.
- Pour the fruit mixture into the prepared crust.
- Bake for 45 minutes, until the crust is golden and the juices are bubbling.
- Let cool before serving.
