Ingredients
- 1 lb dried red beans
- 1 medium onion, chopped
- 2 stalks celery, chopped
- 1 bell pepper, chopped
- 4 cloves garlic, minced
- 1 lb andouille sausage, sliced
- 4 cups chicken or vegetable broth
- 2 bay leaves
- 1 tsp dried thyme
- 1/2 tsp cayenne pepper
- Salt and pepper to taste
- Cooked white rice, for serving
- Chopped green onions and parsley, for garnish
Instructions
- Soak dried red beans overnight.
- In a large pot, sauté onions, celery, and bell peppers until fragrant.
- Add minced garlic and sliced sausage; cook until the sausage is browned.
- Add soaked beans, broth, bay leaves, thyme, cayenne, salt, and pepper.
- Bring to a simmer, then reduce heat to low and cover the pot, cooking for 1.5 hours until beans are tender.
- Adjust seasoning as needed and serve hot over white rice, garnished with green onions and parsley.
