Description

A hearty and flavorful one-pot dish featuring red beans, smoky sausage, and a blend of spices, perfect for family gatherings.


Ingredients

  • 1 lb dried red beans
  • 1 medium onion, chopped
  • 2 stalks celery, chopped
  • 1 bell pepper, chopped
  • 4 cloves garlic, minced
  • 1 lb andouille sausage, sliced
  • 4 cups chicken or vegetable broth
  • 2 bay leaves
  • 1 tsp dried thyme
  • 1/2 tsp cayenne pepper
  • Salt and pepper to taste
  • Cooked white rice, for serving
  • Chopped green onions and parsley, for garnish


Instructions

  1. Soak dried red beans overnight.
  2. In a large pot, sauté onions, celery, and bell peppers until fragrant.
  3. Add minced garlic and sliced sausage; cook until the sausage is browned.
  4. Add soaked beans, broth, bay leaves, thyme, cayenne, salt, and pepper.
  5. Bring to a simmer, then reduce heat to low and cover the pot, cooking for 1.5 hours until beans are tender.
  6. Adjust seasoning as needed and serve hot over white rice, garnished with green onions and parsley.

Notes

For a vegetarian option, substitute sausage with a plant-based alternative or more vegetables. Adjust spices for desired heat level.
