Description

Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 cup cocoa powder
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 cup butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon red food coloring
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract (for filling)


Instructions

  1. In a large bowl, cream together butter, granulated sugar, and brown sugar until smooth.
  2. Add eggs, vanilla, and food coloring, mixing until well combined.
  3. In a separate bowl, whisk together flour, cocoa powder, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  5. Chill the dough for at least 30 minutes.
  6. For the filling, beat together cream cheese, powdered sugar, and vanilla extract until smooth.
  7. Preheat oven to 350°F (175°C).
  8. Once chilled, scoop dough and wrap around a tablespoon of cheesecake filling, ensuring it’s fully enclosed.
  9. Place the stuffed cookies on a baking sheet lined with parchment paper.
  10. Bake for 12-15 minutes, until slightly soft in the center.
  11. Let cool before serving.
