Ingredients
- 2 1/2 cups all-purpose flour
- 1 cup cocoa powder
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1 cup butter, softened
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 tablespoon red food coloring
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract (for filling)
Instructions
- In a large bowl, cream together butter, granulated sugar, and brown sugar until smooth.
- Add eggs, vanilla, and food coloring, mixing until well combined.
- In a separate bowl, whisk together flour, cocoa powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
- Chill the dough for at least 30 minutes.
- For the filling, beat together cream cheese, powdered sugar, and vanilla extract until smooth.
- Preheat oven to 350°F (175°C).
- Once chilled, scoop dough and wrap around a tablespoon of cheesecake filling, ensuring it’s fully enclosed.
- Place the stuffed cookies on a baking sheet lined with parchment paper.
- Bake for 12-15 minutes, until slightly soft in the center.
- Let cool before serving.
Notes
