Ingredients
- 1 cup freshly chopped pineapple
- 1 English cucumber, chopped into bite-sized pieces
- 2 limes, zested and juiced
- 1/4 cup cilantro, roughly chopped
- Salt and pepper, to taste
- 1 tablespoon olive oil (optional)
- 1 tablespoon honey (optional)
Instructions
- Chop the pineapple and English cucumber into bite-sized pieces and mix well.
- Zest and juice the limes, then combine with pineapple and cucumber.
- Add chopped cilantro to the mixture.
- Toss all ingredients together until evenly distributed.
- Season with salt and pepper to taste.
- Serve immediately or refrigerate for up to 3 days, gently tossing before serving if stored.
Notes
Add diced avocado for creaminess or swap cilantro for mint for a different flavor. Adding jalapeños can provide a spicy kick.
