A light and flavorful salad combining sweet pineapple and crisp cucumber, perfect for summer.
Ingredients
- 1 cup freshly chopped pineapple
- 1 English cucumber, chopped into bite-sized pieces
- 2 limes, zested and juiced
- 1/4 cup cilantro, roughly chopped
- Salt and pepper, to taste
- 1 tablespoon olive oil (optional)
- 1 tablespoon honey (optional)
Instructions
- Chop the pineapple and English cucumber into bite-sized pieces and mix them well.
- Zest and juice the limes and combine both with the chopped pineapple and cucumber.
- Roughly chop the cilantro and add it to the mixture.
- Gently toss all ingredients together to evenly distribute.
- Season with salt and pepper to taste.
- Serve immediately or refrigerate for up to 3 days, giving it a toss before serving again.
Notes
Use ripe pineapple for the best flavor. Consider adding avocados or nuts for richness.
