Description

A light and flavorful salad combining sweet pineapple and crisp cucumber, perfect for summer.


Ingredients

  • 1 cup freshly chopped pineapple
  • 1 English cucumber, chopped into bite-sized pieces
  • 2 limes, zested and juiced
  • 1/4 cup cilantro, roughly chopped
  • Salt and pepper, to taste
  • 1 tablespoon olive oil (optional)
  • 1 tablespoon honey (optional)


Instructions

  1. Chop the pineapple and English cucumber into bite-sized pieces and mix them well.
  2. Zest and juice the limes and combine both with the chopped pineapple and cucumber.
  3. Roughly chop the cilantro and add it to the mixture.
  4. Gently toss all ingredients together to evenly distribute.
  5. Season with salt and pepper to taste.
  6. Serve immediately or refrigerate for up to 3 days, giving it a toss before serving again.
