Ingredients

  • 1 sheet of puff pastry
  • 1 cup cooked rice
  • 1 cup fresh spinach, chopped
  • 1 can (or 1 lb) fresh salmon, flaked
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 egg (for egg wash)
  • Salt and pepper to taste
  • Fresh herbs (parsley or dill) for garnish


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Sauté onion and garlic until fragrant.
  3. In a large bowl, mix cooked rice, spinach, and flaked salmon with the sautéed onion and garlic.
  4. Season the mixture with salt and pepper.
  5. Lay the puff pastry on a baking sheet and spoon the filling onto one half.
  6. Fold the pastry over the filling and seal the edges, crimping them to secure.
  7. Brush the top with an egg wash.
  8. Bake in the oven for 25-30 minutes until golden brown and flaky.
  9. Serve warm with fresh herbs or lemon wedges.
