Description

A comforting dish that marries tender chicken with fluffy rice, infused with robust flavors and cooked in one pot for easy cleanup.


Ingredients

  • 1 lb chicken, cut into pieces
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh herbs (parsley or cilantro) for garnish


Instructions

  1. Heat olive oil in a heavy-bottomed pot over medium heat.
  2. Sauté onions and garlic until fragrant.
  3. Add seasoned chicken pieces to the pot and brown on all sides.
  4. Stir in rice and pour in the chicken broth.
  5. Bring to a boil, then reduce heat to low and cover the pot.
  6. Simmer for 20 minutes, or until rice is cooked and liquid is absorbed.
  7. Let the dish rest for 5-10 minutes before serving.
  8. Garnish with fresh herbs before serving.

Notes

For a spicy kick, add diced jalapeños or cayenne pepper during cooking. Adjust the water-to-rice ratio if using brown rice.
