Ingredients
- 1 lb chicken, cut into pieces
- 1 cup long-grain rice
- 2 cups chicken broth
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh herbs (parsley or cilantro) for garnish
Instructions
- Heat olive oil in a heavy-bottomed pot over medium heat.
- Sauté onions and garlic until fragrant.
- Add seasoned chicken pieces to the pot and brown on all sides.
- Stir in rice and pour in the chicken broth.
- Bring to a boil, then reduce heat to low and cover the pot.
- Simmer for 20 minutes, or until rice is cooked and liquid is absorbed.
