Description

A decadent zero-carb vanilla pudding that’s rich, creamy, and perfect for those on a carnivore diet.


Ingredients

  • 2 cups heavy cream
  • 4 large egg yolks
  • 1/2 cup sugar-free sweetener
  • 1 tablespoon vanilla extract


Instructions

  1. Heat the heavy cream in a saucepan over medium heat until it begins to steam, but do not boil.
  2. In a bowl, whisk the egg yolks and sweetener together until well combined.
  3. Gradually temper the egg yolks by slowly pouring the hot cream into the yolks while whisking continuously.
  4. Return the mixture to the saucepan and cook on low heat, stirring constantly until it thickens.
  5. Once thickened, pour into serving dishes and let cool before chilling in the refrigerator for at least 2 hours.

Notes

Garnish with fresh berries or whipped cream for added flavor.
