Ingredients

  • 4 large bell peppers
  • 1 lb ground turkey
  • 1 cup cooked rice
  • 1 cup Asiago cheese, shredded
  • 2 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • 1/2 cup diced tomatoes (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a pan, heat olive oil and sauté ground turkey until cooked through.
  4. Add cooked rice, Asiago cheese, Italian seasoning, salt, and pepper to the turkey mixture. Mix until combined.
  5. Stuff the mixture into the bell peppers, packing it tightly.
  6. Place stuffed peppers in a baking dish and bake for 30-35 minutes until peppers are tender and tops are golden.
  7. Let sit for a few minutes before serving. Enjoy!

Notes

Let the stuffed peppers rest for a few minutes after baking to improve flavor melding. Adjust the seasoning in the stuffing to your preference.
