Ingredients
- 4 large bell peppers
- 1 lb ground turkey
- 1 cup cooked rice
- 1 cup Asiago cheese, shredded
- 2 tsp Italian seasoning
- Salt and pepper to taste
- 1 tbsp olive oil
- 1/2 cup diced tomatoes (optional)
Instructions
- Preheat oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds.
- In a pan, heat olive oil and sauté ground turkey until cooked through.
- Add cooked rice, Asiago cheese, Italian seasoning, salt, and pepper to the turkey mixture. Mix until combined.
- Stuff the mixture into the bell peppers, packing it tightly.
- Place stuffed peppers in a baking dish and bake for 30-35 minutes until peppers are tender and tops are golden.
- Let sit for a few minutes before serving. Enjoy!
