A flavorful and healthy roasted vegetable pizza featuring a nutty whole wheat crust and a delightful medley of caramelized veggies.
Ingredients
- 1 whole wheat pizza dough
- 1 bell pepper, sliced
- 1 zucchini, sliced
- 1 red onion, sliced
- 2 tablespoons olive oil
- Salt, to taste
- Pepper, to taste
- 1 cup mozzarella cheese, shredded
- 1/2 cup feta or goat cheese, crumbled
- Fresh herbs (basil or oregano), for garnish
Instructions
- Preheat your oven to 425°F (220°C).
- Toss the sliced vegetables in olive oil, salt, and pepper, then spread them out on a baking sheet.
- Roast the vegetables in the oven for about 20 minutes.
- Roll out the whole wheat pizza dough to your desired thickness and create a slightly thicker edge for the crust.
- Once the vegetables are done, layer them onto the pizza dough.
- Add mozzarella cheese and crumbled feta or goat cheese on top of the roasted veggies.
- Sprinkle some fresh herbs over the pizza.
- Bake the pizza in the oven until the crust is golden and crispy, about 10-15 minutes.
Notes
Allow your dough to rest for at least 10 minutes after kneading to improve elasticity. Rotating the pizza halfway through baking ensures even cooking.
