Delightful cookies filled with gooey apple filling and warm spices, offering the flavors of apple pie in a convenient form.
Ingredients
- 2 cups all-purpose flour
- 1/2 cup unsalted butter, softened
- 1 cup sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 2 cups diced apples (Granny Smith or Honeycrisp)
- 1 teaspoon cinnamon
- 1 tablespoon lemon juice
- Flaky sea salt for topping
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a saucepan, combine the diced apples, sugar, cinnamon, and lemon juice. Cook over medium heat until the apples are tender.
- In a mixing bowl, cream together the softened butter and sugar. Add the vanilla and mix well.
- In another bowl, whisk together flour, baking powder, and salt. Gradually mix this into the butter mixture until just combined.
- Chill the dough for at least 30 minutes. Once chilled, scoop out dough and place a spoonful of the apple filling in the center. Fold the dough around the filling and shape into cookies.
- Place cookies on the prepared baking sheet and sprinkle with flaky sea salt.
- Bake for 12-15 minutes or until golden at the edges but soft in the center.
- Allow to cool slightly before serving. Enjoy warm or at room temperature.
Notes
For a gluten-free version, use a 1:1 gluten-free flour blend. To make dairy-free, substitute butter with coconut oil or vegan butter.
