Description

Delightful cookies filled with gooey apple filling and warm spices, offering the flavors of apple pie in a convenient form.


Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1 cup sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 cups diced apples (Granny Smith or Honeycrisp)
  • 1 teaspoon cinnamon
  • 1 tablespoon lemon juice
  • Flaky sea salt for topping


Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a saucepan, combine the diced apples, sugar, cinnamon, and lemon juice. Cook over medium heat until the apples are tender.
  3. In a mixing bowl, cream together the softened butter and sugar. Add the vanilla and mix well.
  4. In another bowl, whisk together flour, baking powder, and salt. Gradually mix this into the butter mixture until just combined.
  5. Chill the dough for at least 30 minutes. Once chilled, scoop out dough and place a spoonful of the apple filling in the center. Fold the dough around the filling and shape into cookies.
  6. Place cookies on the prepared baking sheet and sprinkle with flaky sea salt.
  7. Bake for 12-15 minutes or until golden at the edges but soft in the center.
  8. Allow to cool slightly before serving. Enjoy warm or at room temperature.

Notes

For a gluten-free version, use a 1:1 gluten-free flour blend. To make dairy-free, substitute butter with coconut oil or vegan butter.
