Description

A luxurious dessert combining rich chocolate ganache and creamy salted caramel, perfect for special occasions.


Ingredients

  • 1 ½ cups all-purpose flour
  • ½ cup unsalted butter, cold and diced
  • ¼ cup granulated sugar
  • 1 egg yolk
  • 2 tablespoons cold water
  • 1 cup granulated sugar (for caramel)
  • 6 tablespoons unsalted butter (for caramel)
  • ½ cup heavy cream (for ganache)
  • 8 ounces dark chocolate (60-70% cacao)
  • Flaky sea salt (for serving)


Instructions

  1. Prepare the tart crust by combining flour, cold butter, sugar, egg yolk, and cold water; mix until dough forms. Press into a tart pan and chill.
  2. Bake the tart crust at 350°F (175°C) until golden, about 20 minutes. Allow to cool.
  3. In a saucepan, prepare caramel by melting sugar over low heat, stirring constantly until it turns deep amber. Add butter, stirred in slowly, then add cream and cook until smooth.
  4. Pour the salted caramel into the cooled tart shell and let set.
  5. For the ganache, heat cream and pour over chopped chocolate, stirring until smooth. Pour the ganache over the set caramel layer
  6. Chill until firm, then slice into wedges and serve with whipped cream and a sprinkle of flaky sea salt.

Notes

Use high-quality dark chocolate for a richer flavor. Ensure all ingredients are kept cold for the best texture.
