A luxurious dessert combining rich chocolate ganache and creamy salted caramel, perfect for special occasions.
Ingredients
- 1 ½ cups all-purpose flour
- ½ cup unsalted butter, cold and diced
- ¼ cup granulated sugar
- 1 egg yolk
- 2 tablespoons cold water
- 1 cup granulated sugar (for caramel)
- 6 tablespoons unsalted butter (for caramel)
- ½ cup heavy cream (for ganache)
- 8 ounces dark chocolate (60-70% cacao)
- Flaky sea salt (for serving)
Instructions
- Prepare the tart crust by combining flour, cold butter, sugar, egg yolk, and cold water; mix until dough forms. Press into a tart pan and chill.
- Bake the tart crust at 350°F (175°C) until golden, about 20 minutes. Allow to cool.
- In a saucepan, prepare caramel by melting sugar over low heat, stirring constantly until it turns deep amber. Add butter, stirred in slowly, then add cream and cook until smooth.
- Pour the salted caramel into the cooled tart shell and let set.
- For the ganache, heat cream and pour over chopped chocolate, stirring until smooth. Pour the ganache over the set caramel layer
- Chill until firm, then slice into wedges and serve with whipped cream and a sprinkle of flaky sea salt.
Notes
Use high-quality dark chocolate for a richer flavor. Ensure all ingredients are kept cold for the best texture.
